Recipe: Black Bean Soup
Tuesday, January 13, 2015BIG NEWS: I hit 1000 page views! This is super exciting for me.
Anyways, I made a quick and easy soup for lunch today, and it was really delicious. It's great for chilly days.
Black Bean Soup
For Soup
1 can black beans (do not drain)
1 cup chicken broth
1/2 can Rotel (or whole can depending on how spicy you'd like it)
For Toppings
Fat free sour cream, to taste
Tortilla strips, to taste (I used Southwestern flavor)
Mexican style shredded cheese, to taste
Directions
1. Put beans, broth, and Rotel in a slow cooker on low heat for 3-4 hours.
2. Stir.
3. You're done.
(You can also heat this on the stove or in the microwave. It's very versatile.)
I like my beans whole and chunky, but you could easily puree your soup to make it creamier.
Add toppings to taste.
It was too easy and it made an awesome lunch for work. This can serve 2-4 people, depending on how much soup you like.
