Meatless Monday: Bean and Cheese Quesadillas

So I started this new plan in my healthy journey: meatless Monday! This sounds like no big deal, but in the past, going an entire day without meat seemed impossible! So, while it may be a small feat (only one meatless Monday down), I am excited to say I did it. For dinner, quesadillas sounded good- Andre took chicken, and I took bean and cheese. It was delicious.



Ingredients:
10-pack Taco sized tortillas (or smaller)
2-cup bag of Mexican-style shredded cheese
1 can of black beans (unseasoned)
Salsa, to taste
Sour cream, to taste
Butter, or a spray to grease the pan (I used butter)


It is very important that your pan is nonstick and is greased. You don't want your tortillas sticking to the pan and ripping apart.

Directions:

1. Preheat skillet on medium-high heat. Grease pan (with butter or spray, your preference).
2. Spread about 1/8 cup of cheese evenly on a tortilla.
3. Top with 2-3 tablespoons of black beans, and salsa to taste.



4. Add another 1/8 cup of cheese on top.
5. Place carefully into preheated skillet.
6. Once bottom layer of cheese starts to melt, place second tortilla on top. Cover skillet.
7. Let cheese melt to hold tortillas together (about 6 minutes).
8. Flip gently.
9. Let the second side cook until golden brown.



10. Cut into fours, and voila!




11. Repeat until you've completed five quesadillas.
12. Serve with sour cream and/or salsas.

  2. I love making quesadillas and experimenting with different combinations of ingredients for the center. It's always an easy meal to put together.
